The Role
Based at Sydney airport. We are looking for an experienced Sous Chef or a Head Chef looking to make a switch. You will be responsible for developing and leading a team through Breakfast, Lunch and Dinner services 7 days a week. A hands-on chef, you will manage the financials of this business and take ownership of the cafe. Ideally, you will come from a venue that does breakfast lunch and dinner.

About you

  • Have excellent menu planning and costing experience and be confident in rostering to a budget.
  • Be able to assist with the implementation and maintenance of programs to ensure high standards of cleanliness and organisation
  • Instruct and develop apprentices and commis chefs and supervise all team members within your area of responsibility
  • Complete production and food stores stock takes on a monthly basis
  • Prepare wastage reports on a monthly basis, reporting to the relevant parties any concerns
  • Liaise with F&B Manager and Hotel Manager on food costs for each month, analysing any variations to budget subject to seasonal and/or hotel activity
  • Liaise with suppliers on new or alternative products based on cost-effectiveness and seasonal supply
